Vegan Leek, Asparagus, and Sweetcorn soup

This is a recipe that I’ve been working on. and works really well. Simple to make but really delicious and healthy.

  • 1 Bunch of Asparagus
  • 1 Medium Leek
  • 1 Medium/Large Red Onion
  • 1 Tin of Sweetcorn
  • 1.5/2 Litres of Stock
  • 2 Teaspoons of Salt (if you use unsalted stock)
  1. Finely chop the onion, and sauté in Olive oil. Cover until soft (5 minutes).
  2. Add Leek, and keep covered until the leeks are starting to soften (3-5 minutes).
  3. Add Asparagus, and keep covered until everything is soft (3 minutes).
  4. Add vegetable to boiling stock
  5. Bring to the boil and then simmer for 40 mins
  6. Add Sweetcorn
  7. Lightly simmer for 10-15 minutes
