Vegan Leek, Asparagus, and Sweetcorn soup

This is a recipe that I’ve been working on. and works really well. Simple to make but really delicious and healthy.
- 1 Bunch of Asparagus
- 1 Medium Leek
- 1 Medium/Large Red Onion
- 1 Tin of Sweetcorn
- 1.5/2 Litres of Stock
- 2 Teaspoons of Salt (if you use unsalted stock)
- Finely chop the onion, and sauté in Olive oil. Cover until soft (5 minutes).
- Add Leek, and keep covered until the leeks are starting to soften (3-5 minutes).
- Add Asparagus, and keep covered until everything is soft (3 minutes).
- Add vegetable to boiling stock
- Bring to the boil and then simmer for 40 mins
- Add Sweetcorn
- Lightly simmer for 10-15 minutes
